Fruit, vegetables and the cold chain.

A product guide based on published transit recommendations, not storage tables. Product condition, packaging, trip duration and shipper specifications determine the operating plan.

Recommended transit temperatures by product.

Sorted by highest recommended temperature. Whole-produce values come from the USDA truck-transport handbook (1995, reprinted 2008); fresh-cut melon uses industry transport guidance, and strawberries use an Argentine transport protocol. These are desired transit conditions, not legal tolerance limits or a substitute for shipment specifications.

Where minimum and maximum match, the source gives one desired transit temperature, not a permitted fluctuation band. For quick-frozen goods, -18 °C is a maximum product temperature; colder values are acceptable. The USDA figures are references from US practice and must be checked against variety, maturity, destination and applicable Argentine requirements.

Peeled or cut, vacuum-packed

Peeled or cut potato, beetroot, carrot, apple and mango have been left out of the numerical table because the cited transport sources do not establish a universal transit range for them. For each prepared or vacuum-packed product, follow the manufacturer's validated transport temperature, shelf life and food-safety plan. The cut-melon range does not automatically validate other products or vacuum packaging.

How long may the cold chain be interrupted?

There is no universal maximum number of minutes or hours for these products. Applicable temperature must be maintained throughout transport. Any excursion requires the actual product and air temperatures, start and end times, lot and packaging details to be recorded, followed by an assessment by the shipper or quality team before release.

Argentine food transport requirements

One temperature does not fit every load.

Confirm the product and its condition, the shipper or manufacturer instructions, applicable Argentine requirements, vehicle capability and temperature records. Pre-cool as needed and check product temperature at receipt.

Do not combine goods with incompatible temperature, humidity or ethylene requirements in one unsegregated compartment. Fresh whole produce can also be damaged by excessive cold.

A full-scale study of refrigerated citrus truck shipments found that fruit inside a poorly ventilated pallet could warm above 10 °C even when the vehicle was refrigerated. This is a measured observation, not a transport limit for citrus or other products. Read the Food Control research paper (2024)
